Vegetable Minestrone Soup
Ingredients:
Spaghetti (boiled) 200gm
Chicken cubes 2
Carrot (cubed) 1
Beetroot (peeled and cubed) 1
Celery (chopped) 1
Peas (boiled) ¼ cup
Cabbage (finely cut) ½ head
Tomatoes (cut and boiled) 2
Onion (finely cut) 1
Garlic (chopped) 1 clove
Black pepper (crushed) ¼ tsp
Fresh coriander (chopped) 1 tbsp
Green Chillies (chopped) 3
Water 1 ½ cups
Salt to taste
Clarified butter 1 tbsp
Minestrone Soup Method:
1 Heat clarified butter in a pot and fry onions and garlic light brown.
2 Add water and chicken cubes and bring to boil.
3 Add cabbage, beetroot, carrot, tomatoes, celery, pepper and salt; cook.
4 Bring to boil; add peas and cook for few minutes.
5 Add spaghetti; add green chillies and fresh coriander, and dish out.
